  I love Mexican food...we eat tacos, taquitos, taco salad and burritos A LOT at our house.  When I happened upon this recipe, I knew it would be a risk with the fam since they always complain about anything I make with quinoa, but I was hoping that Mexican would trump quinoa...I was THRILLED when 3 of 4 kids LOVED it (and requested seconds) and the hubby ate it without complaint (not sure he loved it)!  I thought it was absolutely delicious and am so excited to share my version with you!
