Often, when I use rice for dinner, I cook twice as much rice as I will need for that meal.  Then, I freeze the leftovers in serving size portions to use for lunches.  Then, I found this recipe and decided to try it for breakfast.  I LOVED it!!!  In fact, I now eat it several times a week.    I found this at CleanandDelicious.com by Dani Spies.  She has some really great recipes, and they are always fast and simple (gotta love that!)
