Often, when I use rice for dinner, I cook twice as much rice as I will need for that meal.  Then, I freeze the leftovers in serving size portions to use for lunches.  Then, I found this recipe and decided to try it for breakfast.  I LOVED it!!!  In fact, I now eat it several times a week. 

 

I found this at CleanandDelicious.com by Dani Spies.  She has some really great recipes, and they are always fast and simple (gotta love that!)

BROWN RICE BREAKFAST BOWL

Ingredients:

1 cup COOKED brown rice

1/2 cup milk (any type you like)

1 tsp. maple syrup

1 tsp raisins

1 tbsp chopped walnuts

1/2 apple, diced

Few dashes of cinnamon

Directions

Combine rice and milk in a microwave safe bowl and heat in microwave for 1-2 minutes or until heated through.

Stir in maple syrup and cinnamon.  Top with raisins, apple and walnuts.  Enjoy!!

This serves 1 and contains 442 calories (full nutritional analysis can be found by following the link to the recipe above).  That may seem like a lot of calories, but this keeps me full for a LONG time and it is really yummy AND it is packed with nutritious ingredients.  Please let us know what you think if you decide to give it a try!
