Indoor Cardio Crusher: Crushed Me

Valerie and I decided to get portions of our Fit Test done together last Thursday while at the gym.  We knew it wouldn't take the whole 45 minutes so we needed a good workout to finish off the time and get a decent sweat.  I volunteered to find one to test out.  See how nice I am?  I volunteered (possibly, slightly guilted) into picking the workout to celebrate Valerie's BIRTHDAY bright and early at 6:45 am!!  In all honesty, I thought I was picking a fairly simple one from one of the many I've pinned on Pinterest, but  I couldn't have been more wrong.

We eat a lot of hot breakfasts at our house and my kids LOVE pancakes.  I don't necessarily love them because they don't pack the nutritional punch I'm looking for in the morning, mostly just a lot of calories from carbs (flour, syrup, yada yada...).  So we decided to change it up a bit!  Sometimes we'll put away the "prepared mixes" and make Oatmeal or Cornmeal pancakes instead from scratch using wheat flour.  Then, the best part is instead of dousing it in syrup we'll top it with fresh or home canned fruits (low, low sugar...

Dianne and Valerie, I just want to thank you guys for all of the time and hard work that you put into making these challenges happen. My sister talked me into signing up for the Winter Challenge. I weighed 249 lbs and was driving trucks over the road at the time so consistent exercise was difficult. Truckstops are not known for their "healthy" food and snacks so when I ran out of stuff I brought with me, it was back to the good tasting/bad for me stuff. " So, the first week of our challenge landed on a the start of my vacation to Florida. Was I apprehensive? You bet!
