How to Cook Perfectly Moist Chicken

This may be a no-brainer to the rest of you, but hopefully there's at least one other person out there that could use a tutorial on mastering the art of a fully-cooked-but-still-moist-and-delicious chicken breast.  Surely I'm not the only one who suffers with WAY-over-cooked-cause-you're-terrified-of-serving-raw-chicken-to-your-family-so-you-leave-it-in-the-oven-until-it's-dry-and-tough-and-no-one-will-eat-it-anyway chicken breast.  For your sake (and the sake of your families), I HOPE I'm the only person with this problem...BUT, I ha...

Chicken Enchilada Quinoa Casserole

I love Mexican food...we eat tacos, taquitos, taco salad and burritos A LOT at our house.  When I happened upon this recipe, I knew it would be a risk with the fam since they always complain about anything I make with quinoa, but I was hoping that Mexican would trump quinoa...I was THRILLED when 3 of 4 kids LOVED it (and requested seconds) and the hubby ate it without complaint (not sure he loved it)!  I thought it was absolutely delicious and am so excited to share my version with you! (click image for a printable copy) P.S. Y...

Honey Whole Wheat Pizza Dough Recipe

My kids love pizza...from Papa Murphys or Pizza Hut.  I'm not sure if they love it so much because pizza usually means that Papa and Granny are coming over to babysit for the night and they will have free reign over the house for the next few hours OR if they are grateful that Mom didn't attempt to feed them another round of French Bread Pizza.  (To be honest, they eat that okay as well, but it's definitely not the same as "real" pizza with "real" crust).  Unfortunately, I've never been very good at making bread.  I've been ...

Starting a new journey

I am indeed starting on a journey.  This journey is different than any I ’ ve taken before.  My journey is about developing an acceptance, love and appreciation for my body through hard work that is not attached to appearance.  This is different than your typical “ eat well and exercise ” regimen.  While the work is physical, it's much more than that. It ’ s mental and emotional, and I ’ m finally ready to tackle it! In my last post  I talked about how much I was equating my self-worth with my appearance and was beginni...

Separating Self Worth and Appearance

Everyday is a fight to recognize my own worth aside from how I look.  I can't tell you exactly what has caused me to feel this way, though I have my suspicions .  I remember being very young, like 7 or 8 yrs. old, when I first started worrying about how others saw me physically.  Did they think I was cute enough?  Was I strong enough to hang out with the boys?  Were my clothes "cool" enough that the girls would want to be my friend?  I remember wondering if I should "diet" in order to look more like the other 3rd a...

Get That Swimsuit On And ENJOY YOURSELF!

Far too often in the course of my life, I have passed on opportunities and/or experiences that would have brought me joy and happy memories because I was uncomfortable with how I looked.  I often felt the pressure that I HAD to look a certain way in order to be accepted by those around me or to be taken seriously by those who participate in our challenges.  It was an overwhelming feeling and frequently lead me down a depressing road of self-loathing and self-sabotage and was absolutely counterproductive to a happy, fulfilling life. &n...

Are you sabotaging yourself with food?

When I first decided to start exercising, one of the reasons I wanted to get fit was…I wanted to be able to eat anything (and everything) I wanted.  I mean, once you are exercising regularly, you can eat cake every day right?  (And monster cookies...and LemonHeads...and Raspberry Fritters and...well, you see where I'm headed here).  Needless to say, that has not worked out so well for me.  Apparently, that's not really how this whole "get fit" thing works.  Sadly, it has become quite clear to me that the saying..."YOU C...

Exercise is my secret "Mood Enhancer"

I spend a LOT of time in front of a computer.  And when I'm not staring at a computer praying for some motivating inspiration to pass on to you, I'm frantically trying to do dishes, clean my house, fold laundry, help with homework, make meals and run kids to soccer games.  I'm guessing that many of you live a similar reality.  Do you ever feel like you are about to either lose your mind, go completely crazy and stand in the middle of your disaster of a house and scream or give up entirely, sit on a pile of laundry that nee...

Do you struggle with your weight?

Do you struggle with your weight?
A good friend of mine, Cherish Saurey, recently wrote a blog post about how although her weight has fluctuated throughout her life, she has never actually "struggled with her weight."  She's discovered that struggles in other parts of her life have ultimately impacted her weight.   Read through her ...

Make your Easter HEALTHY...recipes, games, activities and more...

wasn't really sure what I wanted to share on the blog today.  I knew it should be something Easter-related and I thought about finding a yummy, healthy Easter recipe to share, but then, I decided that focusing on JUST food seemed too small...I needed to go bigger.  So I enlisted the help of my good friend, Google, and started searching around online for healthy Easter ideas.  I found so many great ones, and I decided that for my post today, I would share my favorites with you!!

I'll go ahead and start with food...cause I love food and I found a couple of articles with LOTS of healthy holiday food ideas.

There's Never a Perfect Time to Do a Difficult Thing

I was thinking recently about all the people who are facing life's struggles right now.  Just in the New Year, New You Challenge there have been several who have lost loved ones, lost opportunities and/or just feel down.  They express feelings of frustration about life being too hard to make their health a priority and want to give up now insisting that they'll put themselves back on the priority list once things "settle down".   Oh, how familiar those words and sentiments are.  Please know that if you're feeling this way, y...

Are you the tortoise or the hare?

We all remember the story of the tortoise and the hare...the tortoise is the hero of the story because he wins the race through slow and steady progress.  He doesn't rush out of the starting gate and try to win the race with speed.  He knows he's slow.  He knows the course is long and it will be hard, so he works with his strengths...consistency and determination.  The hare on the other hand is all about speed.  He doesn't think ahead about the consequences of bursting off the line and giving it every bit of...

Super Bowl Snacks - Cleaned Up

So much yumminess in this post!!  With the upcoming big game in mind (you know, the one that most of us watch just to see the commercials...right??), I decided to see if I could come up with a meal that was a little healthier than our normal spread...and I gotta say, it turned out even better than I anticipated.  My family LOVES nachos...so much so that my kids come home from school and put chips on a plate, sprinkle cheese on top and melt it in the microwave for a snack with salsa...they REALLY like them, so of course, that was the n...

How to Emotionally Survive a Weightloss Plateau (& Week 4 Results)

There’s been a lot of talk the past few weeks on the solo support group page about how discouraging it can be when that darn scale gets stubborn and just will not move in the desired direction.  This is actually a common occurrence, especially if you had a big loss in the first couple of weeks.  Our bodies are great at adapting, so if you've been doing the same things for 4 - 6 weeks it may be time for a change.  Patience, consistency and compliance to your plan are necessary and difficult when you want to see your efforts reward...

Discover the Power of I CAN!

At the end of the 2015 Healthy Holidays Challenge we received an email from Marci S. that made me smile from ear to ear!  In one short paragraph she described exactly the message that we here at Lifetime Wellness Challenge are attempting to convey.   Here's what she wrote... "I didn't lose as much weight as I was hoping but the challenge was still a success!  I realized that I CAN find ways to fit in exercise to my busy life.  I CAN limit how many treats I eat, even during Halloween and Thanksgiving!  I CAN drink more w...

Embrace the Rain and be Awesome Today

I've been trying some new workouts this past week, and can I just say, "ouch!"?  Seriously...I forgot how much it hurts to mix things up and move away from the routine, but I gotta say...as painful as it is to sit and stand right now, it's a good hurt...the kind that constantly reminds that I did something hard...I pushed myself and got outside my comfort zone, and I have to admit, it makes me kind of proud and is very motivating.  I know that the pain is temporary, and more importantly, I know that it's making me stronger - which is ...

What is Balance Training & Why is it Important?

What IS balance training and why should I be incorporating it into my regular exercise routine?  Balance training is an often ignored aspect of a fitness routine, but is so very important.   Balance training is a type of exercise that challenges an individual's ability to stabilize outside the normal base of support, which improves balance and proprioception.  Proprioception is the sensation of knowing where the body is in space, such as when walking on an unstable surface.  Balance training uses proprioceptively enri...

Chicken Avocado Tortilla Soup

Who doesn't love avocados?  Okay, lots of people (my kids included), but I REALLY love them.  When I've got them, I go crazy and add them to EVERYTHING: sandwiches, salads, tacos, casseroles, pancakes (hehe, just kidding on that last one, but you get the point).  I was super excited when I saw this tasty looking soup on Pinterest and couldn't wait to try it.  I'm pleased to say that it was as good as I imagined AND bonus - my kids ate it...even though it was green.  I made a few substitutions to the recipe below.  ...

Find YOUR Fight Song

My kids and I have a couple of favorite songs…you know the songs that when they come on the radio in the car, all conversation/fighting stops and everyone sings/screams at the top of their lungs.  Sometimes if we’re almost home and one of those songs comes on, the kids beg me to drive around the block until its over…and I generally oblige (so if you live in my neighborhood and see me driving around rocking out with a gaggle of kids, that’s what’s going on).  One of our favorites is Rachel Platten’...

Why I made an "Exercise Motivations" List

I've been pondering on what to share here on this week's post, and I decided that since this is the beginning of a new challenge, some of you may be struggling with putting together an exercise plan.  You may even be wondering how in the world you can fit 45 minutes of exercise into your already over-scheduled and busy day.  I want you to know that you are not alone.  Making the time for exercise is hard - and sometimes it's much easier to say "there isn't time," "I'm too tired" or "it's selfish to take that time for myself." &nb...

A Little Exercise Motivation

I know I'm not the only person with a thousand excuses for why I don't have time or energy to get my workouts in.  It's tough...like really tough sometimes.  I had a really busy day on Tuesday and just didn't get a chance to workout and then on Wednesday, I gave in to my excuses and convinced myself that I was too tired and decided to take a nap instead of workout.  I felt like crap after the nap and throughout the evening.  I didn't have the energy I needed to clean up and make dinner.  I kind of just slogged my way th...

Healthy Habits Become Second Nature

As you all know, losing weight is GREAT (no-brainer, right??), but Lifetime Wellness Challenge is not JUST about weight loss.  Our number one goal is to help participants live healthier lives whether the scale is involved or not, so when we receive " Share Your Success " emails like this one from Janette, Fall Fit Challenger, it makes us REALLY happy and so proud that she has discovered there are rewards and successes that are bigger and more exciting than just losing weight! "I have been doing the wellness challenge off and on for a coupl...

Finding Success Beyond the Scale

"For me, success did not come by way of the scale.  I wanted to lose 10 pounds on this challenge and only lost 1.  I was SO discouraged and depressed week after week about not losing any weight (and at times even gaining!) that I almost gave up.  Thank goodness I was on the same team as family members that wouldn't let me quit.  So, I don't consider that a success, BUT... and yes, my butt may have shrunk, there is still a big but here... I found success in so many other forms, even just being able to run up the stairs and not get winded was a success.  I used to eat treats all day long.  The first three weeks were VERY difficult for me to give up treats.  I used to drool over them, dream about them and be angry if I couldn't have them.  But now, I don't have ANY of those feelings anymore.  In fact, tonight I turned down a root beer float (which I LOVE) even though I still have two treats left for the week. I just didn't feel like one.  And that was a victory!

30 Minute Bodyweight Strength Workout

I was recently given the less than awesome news that my favorite cardio exercises would need to take a backseat for an extended time to allow a lumbar disc issue to resolve.  After an afternoon of self-pity, I decided to focus on the CANs of my situation rather than the CAN’Ts.  I found that I CAN strength train (minus exercises involving forward flexion of the spine i.e. deadlifts, etc.).  I CAN focus on building my foundation (back, abs, hips) with bodyweight exercises and weightlifting.  I CAN focus on becoming stro...

Fall Fit Week 5 Results

We made it through another week of making healthy habits a consistent part of life!  Give yourselves a great big pat on the back for all your efforts.  For those of you who participated in the Tiebreaker Bonus, we hope that you enjoyed it and that it lifted your spirits this past week.  I truly believe that gratitude is the key to a content, full and happy life.  So, even if you don't get "points" for doing so, I encourage you to continue looking for all the things you have to be grateful for and take a moment to express that gratitude to those who need to hear it!

Many times we seem to tell ourselves that it's the BIG changes that are going to make the biggest difference in our health long-term and though that's not necessarily false, we've found that it is most often all the little things we do daily that makes the greatest impact for real, long-lasting changes to our overall health and well-being.  Okay, okay.... I'll get off my stool now and announce the Week 5 Winners.

WEEK 5 FITNESS CHALLENGE RESULTS

Another great week for our Summer Shape Up participants!  Summer schedules can get pretty hairy, but you are doing so well despite your circumstances.  Though the "habits" may not feel new or fresh and exciting anymore, remember consistency is what matters!  You may also be finding yourself hitting a plateau in your weight loss.  Know this... that is totally NORMAL!  Our bodies are incredibly efficient machines and they adapt very well to changes we make.  If you're still doing the same workouts that worked for...

Making Unexpected Changes with LWC

"I can't tell you how helpful it's been to actually have a program that holds me accountable in such a supportive way.  I hit [a number on the scale this week] I haven't seen in probably 10 years.  I can't describe the impact that seeing that show up on the scale did for me, my motivation and self confidence.  Possibilities are opening up for me that physically were not possible two months ago.  Do you have any idea how amazing that feels?  I'm not just changing my weight.  I'm changing how I experience life.  That is much more of a change than I was expecting when I started what I initially thought was going to be my "next diet" program.  Having a supportive team who motivates each other is the key to this great program.  I definitely could not be doing this alone."  Brian S., The All Mighty Huff & Puffs

I have been so impressed with Brian’s dedication to improving his health during the Summer Shape Up Challenge!  Week after week he consistently works to build healthy habits through earning nearly all of his points each day.  He’s seeing some amazing results because of his hard work!

Take Your Workouts "On the Road"

Summer is the time of year that’s known for increased activity levels.  There are trails to hike, lakes to swim, games to play and roads to be biked, but unfortunately it can also include hours of sitting on your backside.  These days we just don’t tend to live close to all the summer activities we plan.  The city or suburban dweller may have to travel 20 – 45 minutes before hitting a recreation area to enjoy or we may find that all the summer vacationing, road tripping, family reunion(ing) can include several days of “travel” before getting to the fun spot where we get to MOVE!  So, what can we do to stay on track with our health goals and avoid losing momentum while hitting the open road?  My answer?

Healthy Snack Attack Options

School is OUT and summer has officially begun!  While I'm really enjoying not having a schedule and letting my kids stay up and sleep in a little later each day, I'm NOT loving how often they want to SNACK.  Good grief!  My youngest boy is a constant grazer and if I don't have something readily available that is healthy, he's just as happy to pull out the chips, squeeze cheese or popsicles (I will admit that I don't feed my kids ONLY healthy foods - especially if their father has recently been sent to the store for a few "essential" groceries).  That being said, I do try to keep healthy snacks in the rotation and easy to access at all times.  I was a little caught off guard last week though as I guess I just didn't realize how much the kids really ate during the day.  This sent me scrambling to Pinterest for some healthy, EASY snacks that I could prepare ahead of time because although they LOVE my Energy Bites, I just can't keep them happy with those all summer long.  I've found a LOT of really yummy options and wanted to share 2 of them with you today!  Both of these recipes were inspired by recipes found on ChocolateCoveredKatie's website.  If you love sweets and haven't checked out her recipes, I would HIGHLY recommend it.  She's got soooo many delicious-looking, healthy desserts that I can't wait to try!

Week 2 Results: Sweets, Support & Success

Remember the days of youth when summers felt long and full of free hours to fill with whatever kind of free spirited adventures you could think up before Mom called you in when it became dark?  Yes, it's a distant memory for me, too.  These days it feels like summer is just as busy as the holidays can be!  What happened?!?  Oh, that's right adulthood.  All the responsibilities of work, church, children, appointments and then add in all the planning required for summer fun activities like lake visits, hiking, racing, vacations, sports, reunions, barbecues and it can get downright hectic.

You know what else can be surprisingly difficult during the summer?  Earning all those sweets points each week.  Let's be honest.  Summer can be HARD when it comes to sweets!  Maybe not as bad as say... the holidays, but pretty darn close!  It seems like every activity, every barbecue, every gathering of any kind has sugary treats as the main event or at least a highlight to the shindig.  I mean, really, when people think of summer, what images tend to come to mind other than sunshine and water?  Ice cream and popsicles, of course!!  Walking away from it all can become pretty difficult with a persistent host, but it IS possible.  Something that I've found that helps me to navigate sticky situations to be vocal about my goals in casual conversation.  That can make it much easier to make a good decision later when temptation is presented.  These days most people can be pretty understanding and you'll find they may actually want to help you make good choices.  Valerie wrote a post recently and highlighted how changing your personal dialogue from "I can't have that" to "I don't want to eat that" (or something similar) can really help overcome some of those tempting moments.  If you're looking for good suggestions or a pep talk for making better choices you may find this posts helpful.

Little Things Make a Big Difference in a Fitness Challenge

Do you sometimes wonder if those “little things” you’re doing every day such as eating 5+ fruits and vegetables, getting 30+ minutes of exercise, limiting (not forbidding) sweets, reaching out to others and all those other habits you’re working to develop, really make a difference? Let me tell you, THEY DO!  The BEST part of my job is getting to hear all the wonderful successes that our participants experience and seeing those "little things" in action.

Brian S. wrote to us last week saying, “Feeling motivated and so excited that this is working and we're able to do this together with my team. It makes a huge difference. I buttoned the top button on my shirt this week and it fit.  A small thing over all, but it was huge to me.” – Brian S. (The All Mighty Huff & Puffs)

He isn’t alone.  There are many of you striving each week to do the “little things” and those little things are adding up and will pay off in a big way as you stay consistent.
