I will make a few changes next time...first, I won't chop the cauliflower so fine. I may even try grating it instead of chopping it in the food processor. I will also use cold, cooked rice. I didn't have any tonight, so the rice I added was hot from the cooker. And I will scramble the eggs in a separate pan and then add them to the mix. I think these mistakes all contributed to the somewhat mushy texture. I'll also do a little homework about fried rice spices cause I think it could have used more flavor, but I'm not familiar enough with Chinese cuisine to just start throwing things in.
