This was a meal that I kind of just threw together after reading someone's reply to the vegetable Hot Topic about how they use cauliflower in the place of rice.  I was a little skeptical cause I'm not a big fan of cauliflower and think it has a pretty strong flavor that is very difficult to hide.  But, I figured the only harm in giving it a try was having my kids go to bed hungry that night!!!
So, I started out by heating about 2 tablespoons of coconut oil in a pan and throwing in a bunch of chopped up veggies that I had on hand (celery, carrots, onions and frozen peas).
I sauteed that for a few minutes and added half a head of caulflower that I chopped up in my food processor, about 1 teaspoon of minced garlic, 3 cups of cooked white rice (I figured my kids would be MUCH more likely to eat this if I didn't attempt to make this with ONLY cauliflower), some dried ginger, a pint sized jar of my canned beef, and 4 or so tablespoons of soy sauce.
After mixing that together, I added 4 eggs and scrambled them into the mixture and threw in a pinch of salt.
This was the final product (and please forgive the poor picture taking).  It doesn't LOOK fantastic, but the taste was actually pretty great!  All four kids ate it and their only real complaints were the onions and celery (but that is ALWAYS their complaint, so I was anticipating that).  I absolutely could NOT taste the cauliflower, although the texture was a little off.

I will make a few changes next time...first, I won't chop the cauliflower so fine.  I may even try grating it instead of chopping it in the food processor.  I will also use cold, cooked rice.  I didn't have any tonight, so the rice I added was hot from the cooker.  And I will scramble the eggs in a separate pan and then add them to the mix.  I think these mistakes all contributed to the somewhat mushy texture.  I'll also do a little homework about fried rice spices cause I think it could have used more flavor, but I'm not familiar enough with Chinese cuisine to just start throwing things in.
